Chris forwarded me to the product manager responsible for Office Connector and we shared some ideas.
My first idea was using the watermarking feature to add some signature-like watermark to the document. I actually made a couple of successful tests and in theory the whole concept would work. But watermarks are no real digital signatures and I was not very happy with the draft as it only allowed static signatures.
Aras was very interesting in the topic of providing "real" digital signatures for Innovator documents. But this one is not an easy topic and my last feedback was, that changes to the Innovator core are required (which basically means they will need some time).
The corresponding request is IR-063503 ( OC: Ability to add digital signature to documents) when you want to ask for the current status. The ticket is two years old, but it was updated very often (last time this August!). So there definitely seem to be some kind of progress. But I am not sure if digital signing is on the mid-term roadmap.

We did something similar, but not in the context of PDFs.
Regarding PDFs, I did some tests, but I never tried a real digital signature. Basically, they were just images of signatures, which do not qualify as actual digital signatures.
Right now, we have a tablet-based signing solution, not for PDFs but for workflows. We have some workflows where people need vote, but they do not have an Innovator account. I didn't want to create Innovator accounts (and waste licenses) for people who don't actually need an Aras account.
So we came up with this solution. People sign on a tablet, and the signature is stored and count as vote. This allows people to confirm a task.
Remarks: The use case did not require a fully legally binding signature. We needed a simple solution that allows in-house personnel to digitally confirm something. It is essentially a workaround. The signature is stored together with information about the context in which it was provided. We also have some basic validation checks in place to prevent people from simply drawing three dots.
