The default Dropbox fields do not support optgroup elements. However, you could achieve this by using an HTML field and adding your select with your optgroups and options there. This would also require you to code the interaction between the user picking an option and the value of the property being set.
I'll file this as an enhancement for a future release. I've never heard this request before, but it looks really helpful. :)
