How can a dropdown list be filled with values which can be found in an ItemType field

Good day.  I'm not exactly sure what you are asking for with this list.  It sounds like you want a dynamic dropdown list based on another field in the form, is this correct?

yes, I want a dynamic dropdown list, but the field is not present in the form.

You would add a normal dropdown list to the form.  Making the list dynamic involves a method.  I have not created one yet, but there are several posts about them.  Search for Dynamic List.  I saw one post that mentions there is code for it in Programmers Guide 12.0  "7.32 How to Create a Dynamic List".  I hope this helps.
