We would highly appreciate if someone can suggest a learning path(s) for an organization having users across different functions like engineering, SCM, manufacturing, etc.

Aras offers training official training sessions that the team can attend. There are different courses (for example Essentials, Configuring Solutions and Developing Solutions). All trainings come with material you can use as handbook/manual afterwards.
