There was a tech summit demo presentation at ACE Europe showing a way to handle permission based properties. It enables users with limited permissions to customize certain properties in the Form. The solution is intented to work for all ItemTypes and saves the additional work you have to spend for building custom forms. According to the speaker, they actually plan to provide the sample as a community project.
